This is one of our favorites, it reminds me of the nights when my husband was in law school and we'd curl up in bed and snack on Sara Lee Banana Cake, it was so delicious! I think we got them out of the freezer department. It doesn't matter, it was good and a rare indulgence we seldom allowed ourselves.
Ingredients for cake:
- 1/2 cup milk
- 1 TBSP white vinegar
- 8 TBSP butter room temperature
- 1 1/2 cups sugar
- 1 cup mashed bananas
- 2 eggs
- 1 tsp pure vanilla extract
- 2 cups cake flour
- 1 tsp baking soda
- 1/2 tsp salt
Cream Cheese Icing:
- 8 oz cream cheese room temperature
- 6 tbsp butter room temperature
- 3 cups powdered sugar
- 1 tsp pure vanilla extract
- 1/4 teaspoon salt
Directions:
- Pour milk into a liquid measuring cup and add the tbsp of vinegar to sour it. Stir and let sit for about 15 minutes while you prepare other ingredients.
- Preheat oven to 350 degrees. Grease a 9 X 9-inch cake pan and lightly dust with flour or spray with a floured baking spray.
- Whisk flour, salt and soda together and set aside.
- Cream butter and sugar in a mixing bowl until light and fluffy. about 2-3 minutes.
- Add mashed bananas, eggs, and vanilla to the butter & Sugar mixture and mix well until well blended.
- Add the dry ingredients to the banana mixture and mix until well blended.
- Stir the milk, and with the mixer running on low, slowly pour it into the bowl and blend. Be sure to scrape the sides of the bowl.
- Pour batter into pa and bake for about 45 minutes, or until a toothpick inserted into the middle comes out clean. (for me this is about 35 minutes, I have a small wall oven)
- Cool the cake for about 5 minutes and if you want you can now turn it out onto a cooling rack. ( I usually ice mine in the pan, easier to store in the refrigerator.) Whichever way you choose to cool the cake ... in the pan or on the rack ... let cool completely before putting on the icing.
Cream cheese icing:
- Cream butter and cream cheese together until smooth and creamy. Scrape the sides of the bowl as needed.
- Add vanilla and salt and blend completely.
- Slowly add the powdered sugar and mix thoroughly.
- ice the cake (or cupcakes if you'd rather)
